- red potatoes - I use small red potatoes but baby potatoes and Yukon potatoes can be used for this recipe.
- garlic - Minced fresh garlic is best to give lots of flavor to the potatoes. Jarred garlic can be used. In a pinch, garlic powder can also be used.
- fresh parsley and fresh thyme - Using just a few ingredients for the most flavor is why I recommend fresh herbs. If necessary, you can substitute with dried herbs.
- Kosher salt and black pepper - add to your taste for a bit of extra flavor.

🔪Instructions

- Preheat oven to 400°F/204.44°C. Spray a large-rimmed baking sheet with non-stick spray. Set aside.
- Scrub the red baby potatoes and use a paper towel to pat dry. Cut into 1-inch cubes.
- In a medium-sized mixing bowl, whisk olive oil, minced garlic, parsley, and thyme. Add salt and black pepper, to taste.
- Add the red potatoes to the bowl and mix until potatoes are well mixed.
- Spread potatoes evenly on the sheet pan. Bake for about 45 minutes, turning the potatoes halfway through cooking.
- Check for doneness by pricking a wedge with a fork after 45 minutes. The fork should easily go into the potatoes. If they need more time, continue to roast at 5 minute intervals, and check for doneness.
- Taste for seasoning, if needed, season again with salt and black pepper, to taste.
- Ready to serve. Sprinkle with fresh herbs. They can be served on their own or with a favorite dipping sauce.
❄️ Make ahead, storage, and freezer tips
Leftovers can be stored in a covered airtight container in the refrigerator for 3 days and can be frozen for up to 3 months. Defrost overnight or cook from the frozen state at 350°F/176.66°C until cooked through about 20-25 minutes.
To freeze, spread potato wedges on a sheet pan in an even layer and place the sheet pan in the freezer until potatoes are frozen about 30-40 minutes.
Then place them in a freezer-safe bag or container until ready to use, within 3 months. Be sure to label and date the container.
Defrost in the refrigerator for a few hours and bake at 400°F for about 15 minutes.

- Cut the potatoes the same size to ensure they all cook evenly
Be sure the red potato wedges are spread out on the sheet pan in a single layer and are spread out and not touching. - If the sheet pan is overcrowded the potatoes will steam and not develop that crispy exterior we want on these taters.

Do you want to change up this recipe? Here are some ways to vary the recipe.
- This recipe works with just about any variety of potato including baby red potatoes, yellow potatoes, Yukon gold, and even sweet potatoes.
- To vary the flavors on these garlic-roasted red potatoes, use any of your favorite oils, grapeseed, and avocado are two I use often instead of olive oil.
- The herbs and spices in this potato side dish are very flexible. Vary the herbs and use parsley, tarragon, rosemary, Italian seasoning, or basil.
- If using dried herbs to substitute fresh, the best way to judge is normally 1 Tablespoon of fresh herbs is 1 teaspoon of dry herbs.
- Try using Cajun Seasoning or Homemade Seasoned Salt, with olive oil on the potatoes.
- For a spicy potato, try using our Taco Seasoning on the wedges.
- If fresh garlic is unavailable, use 1 teaspoon of garlic powder.
- Sprinkle fresh Parmesan cheese on the roasted potatoes once they come out of the oven. It adds a lovely tang to all the ingredients.

Garlic Red Potatoes

- 1 ½ pounds small red potatoes Note 1
- 3 Tablespoons olive oil
- 3 cloves garlic, finely minced
- 2 Tablespoons fresh parsley, chopped if using dried herbs, 2 teaspoon parsley
- 2 Tablespoons fresh thyme, chopped if using dried herbs, 2 teaspoons thyme
- 1 teaspoon Kosher salt
- ½ teaspoon black pepper

Instructions
- Preheat the oven to 400°F/205°C. Spray a large-rimmed baking sheet with non-stick spray. Set aside
- Scrub the red baby potatoes to clean off any dirt. Use a paper towel to pat the potatoes dry. Cut the potatoes into 1-inch cubes.
- In a medium-size mixing bowl, whisk the olive oil, minced garlic, chopped parsley, and thyme. Add salt and pepper to taste.
- Add in the red potatoes and coat the potatoes completely with the garlic herb mixture.
- Spread the potatoes to lay evenly without touching on the prepared sheet pan. . Roast for about 45 minutes, turning the potatoes halfway through cooking. The potatoes should be browned and crispy on the exterior and have a fluffy soft interior.Check the potatoes by pricking with a fork after 45 minutes. The fork should easily go into the potatoes. If they need more time, check them again for doneness in 5 minutes.
- Taste for seasoning, if needed, season again with salt and black pepper, to taste.
- Ready to serve. Sprinkle more fresh herbs on the potatoes. They can be served on their own or with a favorite dipping sauce.
