½ -1cup homemade blue cheese dressingstore-bought dressing can be used
4 ounces crumbled blue cheese
black pepper, to taste
Instructions
Cut the iceberg lettuce into 4 equal wedges. Place the wedges on 4 plates
Place the wedges on 4 plates.
Evenly sprinkle the tomatoes, red onion, and bacon on the lettuce wedges.
Drizzle the blue cheese dressing on each wedge.
Distribute the blue cheese crumbles on the wedges.
Sprinkle pepper on the wedges and serve.

Note 1: Vine ripe or Roma work well. We have used cherry tomatoes with great results.Note 2: Looking to cut calories, use center-cut bacon. It's leaner and lower in fat and calories.
