Sheet Pan Chicken Fajitas, a quick and easy meal with tender and juicy chicken with fajita seasoning. The chicken is baked with peppers and onions to make a one-pan Tex-Mex dinner in under 15 minutes.

Equipment

Ingredients

  • 12 ounces boneless chicken breasts, sliced into thin strips about 2 inch strips, ¼ inch thick
  • 2 large bell peppers, sliced into strips any color
  • 1 small red onion, peeled and sliced thin
  • 2 Tablespoons olive oil
  • ½ cup fajita seasoning homemade or store bought
  • non-stick cooking spray

Optional Toppings

  • 4 tortillas
  • shredded Mexican cheese
  • fresh chopped cilantro
  • sour cream
  • salsa

Instructions

  • Preheat oven to 450°F. Spray baking sheet with non-stick cooking spray.
  • Place sliced chicken, peppers, and onion on the sheet pan.
  • Drizzle your olive oil over the fajitas. Mix together.
  • Evenly distribute your seasoning over the fajitas. Mix together.
  • Bake in the oven at 450 degrees for about 12 minutes.
  • Serve either on low-carb tortillas, flour tortillas with optional toppings!

Note 1: Eat it as is for a low-carb meal, or in a tortilla! My favorite toppings are shredded cheese, sour cream, cilantro, and salsa or pico de gallo.
