Loaded Potato Salad

Bacon Ranch Potato Salad is a great potato salad loaded with flavor from ranch dressing, bacon, cheese. Great for family and feeding a crowd. Perfect for family dinners, potlucks, Bridal, and baby showers.

Ingredients

  • 1 ½ pounds tri-colored baby potatoes
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 ounce envelope, Ranch dressing mix
  • 12 slices bacon, cooked and crumbled
  • 1 cup cheddar cheese, shredded
  • 4 scallions, chopped
  • salt and pepper, to taste

Instructions

  • Wash and quarter potatoes. Place them in a large pot and cover with cold water. Be sure to add salt and black pepper to the water for extra flavor.
  • Bring the water up to a boil and let the potatoes boil until just fork-tender, about 10-15 minutes.
  • Carefully drain the potatoes via a colander. Set them aside to cool.
  • In a large mixing bowl combine the mayonnaise, sour cream, and Ranch dressing.
  • To that mixture, stir in bacon, cheese, and scallions.
  • Gently stir in the potatoes. Season with salt and black pepper to taste. Everything should be well combined.  
  • Cover and chill the potato salad for at least 2 hours before serving.

Storage:
Leftover potato salad should be stored in an airtight covered container in the refrigerator for up to 3-4 days.
This dish will not freeze well. Any mayonnaise-based recipe should not be refrigerated.
