Instructions

To make the cookies

  • Preheat the oven to 350°F/176.66°C Line a baking sheet with a baking mat or parchment paper. Set aside.
  • In a bowl of a stand mixer, using the paddle attachments, cream together the unsalted butter, white sugar, and brown sugar. Mix on medium speed until well-combined, about 5-7 minutes. The mixture will be creamy and light yellow in color.
  • Add the eggs, one at a time, and mix to incorporate into the batter. Then add vanilla extract to the sugar mixture and mix until combined
  • To mix the dry ingredients, in a medium size mixing bowl, whisk together all-purpose flour, baking soda, and salt.
  • Add the flour mixture to the sugar mixture 1 cup at a time until combined.
  • Using a cookie scoop, scoop out dough balls and roll in your hands to make them round.
  • In a small bowl, pour in the sprinkles and roll the dough ball into the sprinkles. Make sure to evenly coat the sprinkles on the cookie dough. Place the cookies on the prepared baking sheet and lightly press down by using your hand or the back of a measuring cup.
  • Bake the cookies in the oven for 10-12 minutes. The cookies will be slightly soft in the center and the edges will be brown.
  • Remove cookies from the oven and let them cool on a cooling rack.
  • Add the glaze to the cookies by using a sauce brush. Make sure to cover evenly. Allow the glaze to harden then serve.

Make the Glaze

  • In a medium size saucepan, over low to medium heat, add the butter, sugar, water, and vanilla. Simmer, stirring constantly. Once the sugar is dissolved remove the pan from the heat. Set aside to pour on the cooled cookies.

Storage:
Leftover patriotic cookies can be stored in an airtight covered container on the countertop or pantry for up to 1 week.
The cookies can be frozen for up to 3 months. Flash-freeze the cookies on a baking sheet in the freezer for about 30 minutes to harden. This will prevent the cookies from sticking together when placed in the freezer.
The cookies can be stored in a freezer-safe bag, or use a food saver to seal the cookies. Defrost the cookies overnight in the refrigerator.
