Enjoy these Halloween Monster Cookie Brownies that combine both brownies and cookies to make a decadently delicious dessert. Use a box brownie mix to make the process even easier.

Instructions

  • Preheat oven to 350°F/177°C. Spray a 9" X 13" baking pan with nonstick baking spray. Line the baking pan with parchment paper with extra on the four sides.

Brownies

  • Follow the ingredient list and baking directions listed on the back of the boxes. Put the batter in the prepared baking pan. Set aside. ( Both boxes will go into the one pan)

Cookie Dough

  • In the bowl of a stand mixer, using paddle attachment, cream together the peanut butter and soft butter, until well combined, about 4 to 5 minutes. The mixture will be smooth and fluffy.
  • To the peanut butter mixture, add the brown sugar, white sugar, eggs, and vanilla. Beat until completely mixed, about 4 minutes.
  • In a separate medium-size mixing bowl, whisk dry ingredients flour, baking soda, and salt. Stir in the oats and chocolate chips.
  • Slowly add and mix the dry ingredients into the peanut butter mixture until combined.

Assemble the brownies

  • Use a serving spoon to drop the oatmeal mixture over the brownie batter.
  • Sprinkle the Halloween sprinkles and the large candy eyes over the top.
  • Bake in the preheated oven for 25-25 minutes. Insert a toothpick in the center, brownies are cooked through when the toothpick comes out clean.
  • When done, set on a counter for at least 30 minutes to cool. Remove from the baking pan.

Frosting

  • In the bowl of a stand mixer, using the beater attachment, beat the butter, powdered sugar, vanilla, and heavy whipping cream until combined, creamy, and stiff.
    Beat in a few drops of neon green food coloring and mix until blended
    Allow frosting to firm up before enjoying!

  • Scoop the frosting into the piping bag. Pipe big and small dollops on the brownies. Place two mini candy eyes in each dollop of frosting.
  • Let the frosting harden before slicing and serving.
