Champagne Vinaigrette

A tangy low-fat and low-calorie salad dressing! Made with champagne vinegar, avocado oil and agave. This is fabulous on salads, veggies, even as a marinade for chicken and other meat dishes. Once prepared, this will keep in the fridge for about a week!

Equipment

Ingredients

  • cup champagne vinegar
  • 1 Tablespoon shallot chopped
  • 2 cloves garlic peeled and chopped
  • 2 teaspoon Dijon mustard
  • 1 teaspoon pure maple syrup
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • cup avocado oil olive oil can be used

Instructions

  • Combine champagne vinegar, shallots, garlic, Dijon mustard, maple syrup, black pepper, and salt in the blender. While the blender is running, slowly add the avocado oil to blend ingredients.
  • Taste for seasoning. If needed, adjust the seasoning.
  • Serve over your favorite salad.
