Roasted Corn on the Cob

Oven Roasted Corn is a great recipe for any family meal and perfect for cooking for a crowd. The herb butter puts the corn over the top delicious.

Ingredients

  • 6 ears fresh corn, husks and silks removed Note 1

Herb Butter

  • 3 Tablespoons unsalted butter, softened
  • 1 teaspoon garlic salt
  • 1 teaspoon chopped fresh parsley Note 2
  • 1 teaspoon chopped fresh basil Note 2
  • ½ teaspoon cracked black pepper Note 2
  • extra butter for serving, optional topping

Instructions

  • Preheat oven to 425°F.
  • In a small mixing bowl, combine until well mixed the softened butter, garlic salt, chopped parsley, and chopped basil.
  • Evenly divide and spread the butter mixture on each ear of corn.
  • Wrap each piece of corn in aluminum foil.
  • Place the corn in a large casserole dish or large baking sheet.
  • Bake in the preheated oven for about 20-25 minutes. Corn will be soft, juicy, and tender when ready to eat.
  • Serve with additonal butter, lime wedges, salt, and pepper.

Variations
Note 1: Remove the husks and silks right before roasting for best results. 
Note 2: If using dried herbs, use ½ teaspoons of each herb.

  • Herb butter is awesome. Chopped herbs like parsley and basil mixed with garlic salt and black pepper. (recipe below).
  • Parmesan Cheese and butter.
  • Any citrus such as lime, lemon, or orange juice and butter are a great combo.
  • Garlic, lemon, and butter, delish.
  • Any combo of herbs such as rosemary, thyme, basil, and oregano along with citrus and butter would be awesome.
