Neiman Marcus Cookies

  • Preheat oven to 375°F. Spray a baking sheet with non-stick spray or place a Silpat on the baking sheet, or use parchment paper on the baking sheet. Set aside,
  • To a blender or food processor bowl with the chopping blade attached, add the oatmeal, pulse until it is finely grounded, with a sandy texture. Set aside.
  • In a medium size mixing bowl, stir together the dry ingredients; ground oats (from step 2), flour, baking soda, baking powder, and salt.
  • In the bowl of an electric mixer using the paddle attachments or in a large mixing bowl, using a hand mixer with beaters attached cream white sugar, brown sugar, and softened butter. Blend until the sugar is well mixed into the butter, around 4-5 minutes.
  • Use the mixer to blend in the eggs and vanilla extract to combine ingredients.
  • To the egg mixture, mix in the dry ingredients to blend. Do not overmix ingredients.
  • Fold in the chocolate chips, chopped chocolate bar, and chopped nuts into the cookie mix.
  • Roll the dough into 2-inch cookie balls and place on the prepared baking tray, 2 inches apart.
  • Bake in the preheated oven for 10 minutes. Cookies will be golden brown and soft in the center. Let cool for a few minutes before transferring to a cooling rack to cool completely.
  • Serve and enjoy.

Note 1: I have found quick oats do not work well. We use old-fashioned rolled oats. 
Storage: Store the cookies in a covered airtight container for about 5 days after they are baked.
To freeze the cookies, once the cookie dough is prepared, make them into small dough balls. Place the balls on a baking tray in the freezer for about 1 hour. Then keep the dough balls in a freezer bag until ready to bake. Defrost and bake as directed below.
