Chopped Cucumber Tomato Salad
Chopped cucumber tomato salad is an easy to assemble light salad with a zesty red wine vinaigrette.
Servings 6 servings
- 4 medium tomatoes, chopped Note 1
- 1 cucumber, peeled and chopped
- 1 green onion, chopped
- 3 Tablespoons olive oil
- 2 Tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Place the sliced cucumbers, tomatoes, and green onions in a bowl, set aside.
In another small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and black pepper.
Pour the vinaigrette over the cucumber tomato mixture, gently stir to combine.
Refrigerate at least 30 - 60 minutes to let flavors blend.
Note 1: Roma or vine ripe tomatoes are the best for this salad.
