Cream Cheese Frosting

  • ½ cup unsalted butter, room temperature
  • 8 ounces low-fat cream cheese, room temperature Note 2
  • 1 teaspoon pure vanilla extract Note 3
  • ¼ teaspoon salt
  • 3 - 4 cups confectioners sugar Note 4
  • 2 Tablespoons Holiday Sprinkles Note 5

Instructions

How to Make a Sugar Cookie Cake

  • Preheat oven to 350F/177°C. Spray a 9" x 13" baking dish or casserole dish and set aside
  • In a large mixing bowl, using an electric hand mixer with beaters attached on low speed, cream together the butter and cream cheese until well combined, about 2 minutes.
  • To the mixture, add in the white sugar and continue to beat together for another 2 minutes until light and fluffy.
  • Add in the egg, vanilla extract, and almond extract, and beat until just combined. Set aside.
  • For the dry ingredients, in a medium-sized bowl, whisk together the flour, baking soda, baking powder, cream of tartar, and salt until fully combined
  • Add the dry ingredients into the wet ingredients, beat until fully incorporated.
  • Pour the batter into your prepared baking dish and bake for 25-30 minutes, until an inserted toothpick comes out clean.
  • Allow the cake to cool completely before frosting.

Cream Cheese Frosting

  • In the bowl or stand mixer with the paddle attachment on low speed or a hand mixer with beaters attached, combine the butter and cream cheese together, until completely combined.
  • On low speed, beat in the vanilla extract, salt, and 2 cups of confectioners sugar. Be sure to have the mixer on low speed, otherwise the confectioner sugar will go everywhere.
  • Add additional confectioner sugar, as needed. After 20 seconds and the confectioner surge sugar is blended, increase to medium/high speed and blend another 2 minutes. The frosting will be ready to use.
  • Use an offset spatula to spread the cream cheese frosting on the cake.
  • Add Holiday sprinkles for a festive touch. 

Notes

Note 1: I prefer to use unsalted butter and add salt in to the recipe. If using salted butter, do not add salt.
Note 2: We use low-fat cream cheese as it adds amazing flavor with a slightly lower calorie count. Full-fat cream cheese or Neufchatel cheese can be substituted instead of low-fat cream cheese.
Note 3: Once the frosting is made, give it a taste and if needed, add a bit more vanilla extract. 
Note 4: Start with 3 cups and add more according to your preference for the thickness of the frosting.
Note 5: This cake can be made for any holiday. Adjust your sprinkles to the festive day of celebration.
