Slice your log into 16 slices. Transfer each slice onto paper towel, and dab each slice to remove any moisture.
In a medium sized bowl, mix together the Panko breadcrumbs, Italian seasoning, and garlic powder.
Place your Medallions into the egg wash and make sure it is fully coated on each side.
Place the Medallion into the Panko breadcrumbs and coat both sides. Repeat these two steps one more time so the mozzarella slices have a double coating of breadcrumbs
Place the breaded mozzarella slices in the freezer for about 30 minutes. This will firm them up so they do not melt too quickly.
Preheat your air fryer at 400° for five minutes. You do this by starting the air fryer without any food in it.
Give a light spray to the Panko encrusted mozzarella pieces. Transfer your medallions to your air fryer. Make sure that they are not touching one another.
Set your air fryer to 390° For five minutes. Flip them over and spray them again with a non-stick spray. Set your air fryer to 390° for an additional 2 to 3 minutes. They should be crispy and brown.
Eat as is, or a dip in your favorite marinara sauce! Enjoy

Note 1: You can also used seasoned Panko or Italian seasoned breadcrumbsTotal cook time is going to vary depending on the size of your air fryer. My air fryers has multiple layers so I can fit all 16 into it. Some are smaller and you will need to do multiple batches.
