No Bake Granola Bars

Easy and delicious granola bars are no-bake and have countless variations. Great for snacking or breakfast on the go.

Instructions

  • Place parchment paper in a 9x13 casserole dish or on a large baking sheet.
  • Mix together your rice cereal, oats, and flaxseed in a large bowl. Set aside.
  • Heat a medium sized sauce pan over medium high heat, mix together honey and coconut oil in the pan until melted. Continue to stir occasionally and leave on until it starts to boil.
  • Remove the pan from the heat. Mix in almond butter (or peanut butter) and vanilla extract until the almond butter is completely melted into the mixture.
  • Pour the melted mixture from the sauce pan over the dry ingredients. Mix well. Allow the mixture to cool for about 10 minutes
  • Place the granola mixture over parchment paper in the prepared casserole dish or baking sheet. Evenly distribute the granola mixture.
  • While your granola mixture is still warm, sprinkle your chocolate chips evenly over the mixture.
  • Use another sheet of parchment paper to place on top of the granola and chocolate chips. Press down well using your hands, or another hard item (such as a small cutting board, cookie sheet, etc.) This will melt your chocolate chips into the granola bars as well as making sure that your mixture is evenly pressed.
  • Place the granola bars in the fridge for at least an hour to overnight before cutting into 32 squares.
  • Wrap the individual bars in plastic wrap. Keep in the bars in the fridge until ready to enjoy.

Notes

Note 1: Be sure to refrigerate the granola mixture for at least an hour before cutting.

Store the bars in the fridge until ready to eat. We cut them into bars and wrap individually. 
Ingredient Variations:
  • Add in your favorite nuts. Be sure to chop them into small pieces.
  • Nut butter are very interchangeable so feel free to vary the butter ingredient to your choice.
  • Coconut flakes are a wonderful addition to granola bars.
  • Pure maple syrup can be used in lieu of honey.
  • Any dried fruit such as raisins, cranberries, and blueberries can be added in.
