Chicken Taquitos, Air Fryer or Baked

Air Fryer or Baked Chicken Taquitos, a Mexican appetizer or meal made with shredded chicken, salsa, and sour cream.

Ingredients

  • 1 pound cooked shredded chicken breasts Note 1
  • ½ cup sour cream Note 2
  • ½ cup salsa Note 3
  • 1 Tablespoon taco seasoning
  • 6 flour or corn tortillas, 6" to 8" in size

Instructions

Air Fryer Taquitos

  • If using corn tortillas, dampen a paper towel, wrap the corn tortillas in the dampened paper towel and microwave for about 30 - 40 seconds. Or heat a pan over medium heat and warm the tortillas about 10 - 15 seconds per side. They will be pliable and easy to roll.
  • In a large mixing bowl, combine the shredded chicken, sour cream, salsa, and taco seasoning.
  • Once mixed fill the tortillas with 3-4 tablespoons of the chicken down the center of each tortilla.
  • Tightly roll and set aside.
  • Spray the air fryer basket with oil. Place taquitos in the air fryer basket. Cook at 380°F for 10 minutes.
  • Remove and top with favorite toppings such as shredded cheese, sour cream, and guacamole.

Baked Chicken Taquitos

  • Preheat oven to 425°F/218°C. Spray a baking sheet with non-stick olive oil spray or oil.
  • Follow step 1-4 in the air fryer instructions.
  • Place the rolled chicken taquitos onto the prepared baking sheet.
  • Bake in the preheated oven for about 15 - 20 minutes. The tortillas will be crispy and the filling warm.
  • Top with your favorite sauce, salsa, and cheese.

Note 1: Mexican Shredded Beef can be used to make this recipe. 
Note 2: Softened cream cheese can be used in lieu of sour cream.
Leftovers: Any leftovers can be kept in a covered airtight container for up to 4 days. Reheat in the microwave, following manufacturer's instructions. Another option, in the oven at 350°F in an oven-safe dish for about 10 minutes, until hot.
Freezer Instructions: These chicken taquitos freeze really well. They can be frozen up to 3 months in a freezer-safe container. Defrost overnight in the fridge and use the air fryer or oven instructions. Or place the frozen taquitos in the air fryer at 380°F and cook about 15 minutes, be sure to spray with oil spray first. 
They can be baked at 425°F, frozen for about 25-30 minutes. Also spray the pan and the taquitos with olive oil spray before baking the frozen rolled tacos.
