Valentine's Linzer Heart Cookies

Enjoy a classic Linzer cookie for a special Valentine's Day treat. These are buttery cookies with a raspberry jam layer. Top the cookie with powdered sugar for a festive and delicious cookie.

  • Preheat oven to 350°F. Line two baking sheets with parchment paper. Set aside.
  • Using a standing mixer using the paddle attachments or a large bowl with using a hand mixer, beat the butter, sugar, and almond extract until creamy and fluffy, about 5 minutes. The mixture will be light yellow when well beaten.
  • Gradually mix in the dry ingredients until combined.
  • Remove cookie dough and place on a lightly floured cutting board or work surface.
  • Dust the top of the dough with a dusting of flour.
  • Roll the dough to about ¼ inch thick.
  • Use the 4-inch heart-shaped cookie cutter, cut out 12 large hearts and place them onto the prepared baking sheet.
  • Using the mini heart cookie cutter, cut out 6 hearts in the center of 6 cookies.
  • Bake in the oven for about 8-10 minutes or until a light golden brown
  • Remove from oven and allow to cool completely before moving off the baking sheet.
  • Spread about 1 Tablespoon of raspberry preserves onto the whole heart cookie.
  • Place the cookies with the heart in the middle on top of the whole heart cookie covered with jam.
  • Dust with top of the cookies with powdered sugar.
  • Serve and enjoy.

Note 1: Vanilla extract can be used.
