Enjoy light, fluffy baked potatoes topped with pulled pork for a hearty dinner all made in the slow cooker. The potatoes cook on the bottom of the slow cooker, layer foil, then pork chops and barbecue sauce. Serve the potatoes topped with shredded BBQ pork.
Prepare the slow cooker by spritzing the liner with nonstick cooking spray.
Place the pork loin chops in the bottom of the slow cooker and season with salt and black pepper. Top with the barbecue sauce.
Place a layer of aluminum foil over the pork. Place the potatoes over the foil.
Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours or until the potatoes are cooked through.
Carefully remove the potatoes and foil from the slow cooker. Set aside.
Shred the pork with two forks
Split the potatoes open and top with pulled pork and shredded cheese.
Serve with any topping desired such as sour cream, sliced green onions, additional barbecue sauce, or cooked and crumbled bacon.
