In a medium-sized frying pan add all the filling ingredients, apples, light brown sugar, cinnamon, nutmeg, allspice, and tequila or water, toss to combine
Cook over medium heat and simmer for 10-15 minutes.
Stir the apple mixture often to evenly coat the apples in a brown sugar sauce.
Remove the pan from the heat and set it aside, let the apple mixture cool to room temperature.
Preheat the oven to 350°F/177°C. Spray a baking pan with non stick baking spray and set aside.
In a small bowl add the sugar and cinnamon and whisk to combine.
Wrap the tortillas in a damp paper towel and microwave for 30 seconds.
Lay the tortillas on the prepared baking sheet and scoop 1⁄4 cup of apple filling into each tortilla.
Wrap the tortilla around the apple filling and place it seam down on the baking sheet
Repeat with all tortillas.
In a small bowl add your butter and microwave for 30 seconds to melt.
Brush each tortilla with the melted butter.
Bake the taquitos in the preheated oven for 15 minutes.
Brush on more melted butter on top of the taquitos and sprinkle the cinnamon sugar mixture on top of each taquito.
To serve, drizzle caramel sauce on top of the taquitos.
Serve warm, add whip or ice cream, and enjoy.
