Place 1½ pounds boneless chicken breasts in the bottom of the slow cooker.
In a large mixing bowl, stir together 1 cup rinsed rice, 1 small diced yellow onion, 3 cloves minced garlic, 1 cup chicken broth,½ cup heavy cream, ¼ freshlysqueezed lemon juice, 1 large lemon zest,1 teaspoon dried basil, 1 teaspoondried oregano, ½ teaspoon salt, and ½ teaspoon black pepper.
Pour the rice mixture over the chicken breasts in the slow cooker, ensuring the chicken is covered with the rice mixture. Add 2 cups broccoli florets to the slow cooker.
Cover the slow cooker and cook on low heat for 4-6 hours or on high heat for 2-3 hours, or until the chicken is cooked through and the rice is tender.
Once cooked, use a fork to shred the chicken directly in the slow cooker, mixing it with the creamy lemon rice. Taste and adjust seasoning with salt, pepper, and additional lemon juice, if desired.
Sprinkle 1 cup cheddar cheese over the top of the the ingredients in the slow cooker. Place the cover back on and cook until the cheese has melted about 10-15 minutes.
Serve the chicken and rice hot, garnished with chopped fresh parsley if desired.
