Homemade Strawberry Waffles are light and fluffy! Easy to prepare and are easily frozen for make ahead breakfast! A perfect addition to your Easter Brunch! Bring some along to celebrate Mom on Mothers Day!
In a medium bowl, sift together flour, sugar, baking soda, baking powder, and salt. Set aside.
Separate the eggs into two bowls. Egg whites in one bowl, yolks in another bowl. (Note 1)
Whip the egg whites until light and fluffy, set aside.
Lightly beat egg yolks, about 1-2 minutes, they will have a light yellow color.
Gently mix in buttermilk, canola oil, and vanilla extract into the egg yolk mixture.

Gently fold in the egg whites and fresh strawberries.
Heat waffle maker according to manufacturer's instructions.
Spray waffle maker with non-stick spray and pour in enough batter to make a waffle.
Follow waffle maker instructions to make your remaining batter.
Serve waffles with fresh strawberries and maple syrup.

Note 1: I have not done a tutorial on separating eggs yet. This one by The Pioneer Woman is a great tutorial with a few options. Note 2: If using frozen strawberries, let defrost slightly and then chop into bite size pieces.
