Chocolate Whoopie Pies

Decadently delicious chocolate whoopie pies with a chocolate filling and drizzled with chocolate are going to be a family favorite. Make these a Valantine's Day treat by adding a chocolate heart to the center of the whoopie pies.

Chocolate Whoopie Pie

Chocolate Frosting

  • 1 ½ cup confectionary sugar
  • ½ cup unsalted butter softened
  • 3 Tablespoon heavy cream
  • ¼ cup cocoa powder

Instructions

  • Preheat oven to 350°F. Spray either a baking sheet or whoopie pie pan with baking spray. Set aside.
  • Using a large bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • Using a standing mixer, with paddle attachments, beat unsalted butter, shortening, and brown sugar until combined and smooth, about 5 minutes.
  • Beat in the egg and vanilla extract until combined.
  • Alternate between the flour and milk and gradually mix until combined.
  • Spoon 1 1⁄2 Tablespoon of batter into the prepared whoopie pie cavities or on the prepared baking sheet. If using a baking sheet, be sure to space the batter at least 3 inches apart as it will spread.
  • Bake in the oven for about 10-12 minutes or until the tops are fluffy and bounce back when touched.
  • Allow the pies to cool before frosting. Recipe below.

Chocolate Frosting

  • Using a standing mixer, with paddle attachments or an electric mixer with beaters, beat the powdered sugar, unsalted butter, cocoa powder and heavy whipping cream until combined, smooth and stiff.
  • Scoop the frosting into the piping bag with tip.
  • Pair the whoopie pies with their size mate.
  • Pipe frosting onto the bottom of the whoopie pies and place the top on top of the frosting and press down lightly.

Chocolate drizzle

  • Drizzle with melted chocolate and place a Godiva heart in the center

Note 1: I use a rimmed baking sheet to make my whoopie pies. When I am giving as gifts, I use the whoopie pie pan. It is not a necessity to use the pan for delicious whoopie pies. If you are on a budget, I would not splurge on the pan. I'd rather have a great knife. :) 
Note 2: These whoopie pies are versatile. Use for so many holidays and celebrations. Use holiday sprinkles for any celebration to drizzle over the chocolate. Or use holiday chocolates such as a chocolate shamrock, for Saint Patrick's day.
