Plus, they're perfect for any occasion - whether you're looking for Valentine's Day treats or something special to take to a party. So why not give them a try? You won't regret it!

    Chocolate Whoopie Pie

    • all-purpose flour
    • cocoa powder
    •  baking soda
    • Kosher salt
    • unsalted butter, softened
    • vegetable shortening
    • dark brown sugar
    • egg
    • pure vanilla extract
    • whole milk

    Chocolate Frosting

    • confectionary sugar
    • unsalted butter softened
    • heavy cream
    • cocoa powder

    Topping

    • chocolate hearts 
    • semi-sweet chocolate chips, melted to drizzle over whoopie pies
    • non-stick cooking spray

    Instructions

    1. Preheat oven to 350°F. Spray either a baking sheet or a whoopie pie pan with baking spray. Set aside.
    2. Using a large bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
    3. Using a standing mixer, with paddle attachments, beat unsalted butter, shortening, and brown sugar until combined and smooth, about 5 minutes.
    4. Beat in the egg and vanilla extract until combined.
    5. Alternate between the flour and milk and gradually mix until combined.
    6. Spoon 1 1⁄2 Tablespoon of batter into the prepared whoopie pie cavities or on the prepared baking sheet. If using a baking sheet, be sure to space the batter at least 3 inches apart as it will spread.
    7. Bake in the oven for about 10-12 minutes or until the tops are fluffy and bounce back when touched.
    8. Allow the pies to cool before frosting. Recipe below.

    Chocolate Frosting

    1. Using a standing mixer, with paddle attachments or an electric mixer with beaters, beat the powdered sugar, unsalted butter, cocoa powder, and heavy whipping cream until combined, smooth and stiff.
    2. Scoop the frosting into the piping bag with a tip.
    3. Pair the whoopie pies with their size mate.
    4. Pipe frosting onto the bottom of the whoopie pies place the top on top of the frosting and press down lightly.

    Chocolate drizzle

    1. Drizzle with melted chocolate and place a Godiva heart in the center.

    Storage

    Leftovers can be kept in an airtight container for about 5-6 days at room temperature.

    Expert Tip: If you don't have a whoopie pie pan, you can use a rimmed baking sheet instead.

    Note 1: I use a rimmed baking sheet to make my whoopie pies. When I am giving as gifts, I use the whoopie pie pan. It is not a necessity to use the pan for delicious whoopie pies. If you are on a budget, I would not splurge on the pan. I'd rather have a great knife. 🙂
