Air Fryer Mozzarella Medallions
The air fryer is one of my favorite ways of cooking food I usually fry. The end results are better for you because only a little oil or non-stick spray. I love these mozzarella medallions because they look so pretty and a bit sophisticated. Same idea as a cheese stick but prettier. These are great served with marinara sauce or a nut-free basil pesto.
Ingredients
The Panko breadcrumbs give a nice crunch. You can use seasoned or regular bread crumbs in this recipe.
We use the fresh mozzarella in log form. If using a block of mozzarella you will need to cut the cheese in half and then slice each half.
