- Preheat oven to 350°F. Line two baking sheets with parchment paper. Set aside.
- Using a standing mixer with the paddle attachments or a large bowl with using a hand mixer, beat the butter, sugar, and almond extract until creamy and fluffy, about 5 minutes. The mixture will be light yellow when well beaten.
- Gradually mix in the dry ingredients until combined.
- Remove cookie dough and place it on a lightly floured cutting board or work surface.
- Dust the top of the dough with a dusting of flour.
- Roll the dough to about ¼ inch thick.
- Use the 4-inch heart-shaped cookie cutter, cut out 12 large hearts and place them onto the prepared baking sheet.
- Using the mini heart cookie cutter, cut out 6 hearts in the center of 6 cookies.
- Bake in the oven for about 8-10 minutes or until a light golden brown
- Remove from oven and allow to cool completely before moving off the baking sheet.
- Spread about 1 Tablespoon of raspberry preserves onto the solid heart cookie.
- Place the cookies with the heart in the middle on top of the whole heart cookie covered with jam.
- Dust the top of the cookies with powdered sugar.
