    Linzer Heart Cookies

    Linzer heart cookies are jam-filled cookies with a heart in the middle. These sweet treats are the perfect fruit-filled Valentine's Day Cookie.

    Ingredients

    • granulated white sugar
    • pure almond extract
    • all-purpose flour
    • kosher salt
    • raspberry preserves
    • confectioners sugar for dusting the cookies

    • Mixing bowl
    • Measuring cup and spoons
    • Rolling pin
    • 4-inch heart-shaped cookie cutter
    • Mini heart-shaped cookie cutter

    Instructions

    1. Preheat oven to 350°F. Line two baking sheets with parchment paper. Set aside.
    2. Using a standing mixer with the paddle attachments or a large bowl with using a hand mixer, beat the butter, sugar, and almond extract until creamy and fluffy, about 5 minutes. The mixture will be light yellow when well beaten.
    3. Gradually mix in the dry ingredients until combined.
    4. Remove cookie dough and place it on a lightly floured cutting board or work surface.
    5. Dust the top of the dough with a dusting of flour.
    6. Roll the dough to about ¼ inch thick.
    7. Use the 4-inch heart-shaped cookie cutter, cut out 12 large hearts and place them onto the prepared baking sheet.
    8. Using the mini heart cookie cutter, cut out 6 hearts in the center of 6 cookies.
    9. Bake in the oven for about 8-10 minutes or until a light golden brown
    10. Remove from oven and allow to cool completely before moving off the baking sheet.
    11. Spread about 1 Tablespoon of raspberry preserves onto the solid heart cookie.
    12. Place the cookies with the heart in the middle on top of the whole heart cookie covered with jam.
    13. Dust the top of the cookies with powdered sugar.
    14. Serve and enjoy.

    Storage

    Store your Linzer heart cookies in an airtight container in the refrigerator for up to a week.

    This cookie dough can also be frozen, well wrapped, for up to 1 month. Defrost the dough and make the cookies as directed.
