In a medium-size bowl, sift all-purpose flour, brown sugar, baking powder, cinnamon, nutmeg, and salt. Set aside.
In a small bowl, using an electric hand mixer with beaters attached, beat together milk, egg, melted butter, and vanilla extract until well combined, about 1 to 1 ½ minutes.
Gradually mix wet ingredients into dry ingredients, until batter is smooth.
Add diced apples and chopped cherries to the fritter batter mixture. Set aside.
In a large heavy bottom skillet, over medium heat, add oil, let heat to 360°F, use candy thermometer if needed. If you don't have either, you can heat the skillet on medium-high heat and test the oil by dropping in a small amount of batter. If it is sizzling and frying, then the temperature is good, if not, turn up the heat a little.
Carefully drop large spoonfuls of batter into the oil. As it browns, use a slotted spoon/spatula to flip the fritters and fry on the other side. These should only take 1 1⁄2 – 2 minutes per side. You can test the first fritter to make sure the center is done.
Transfer the fritters to a paper towel to drain and then place on a wire rack to cool slightly.
Once cooled, Use a fork to drizzle fritters with icing. Serve!
