    • all-purpose flour
    • light brown sugar
    • baking powder
    • ground cinnamon
    • ground nutmeg
    • salt
    • whole milk
    • large egg
    • unsalted butter, melted
    • pure vanilla extract

    • cherries, chopped fresh, frozen, or maraschino will all work
    • vegetable or canola oil for frying

    Instructions

    Steps to make cherry fritters with tet overlay.
    1. In a medium-sized bowl, sift all-purpose flour, brown sugar, baking powder, cinnamon, nutmeg, and salt. Set aside.
    2. In a small bowl, using an electric hand mixer with beaters attached, beat together milk, egg, melted butter, and vanilla extract until well combined, about 1 to 1 ½ minutes.
    3. Gradually mix wet ingredients into dry ingredients, until batter is smooth.
    4. Add diced apples and chopped cherries to the fritter batter mixture. Set aside.
    5. In a large heavy bottom skillet, over medium heat, add oil, let heat to 360°F, use candy thermometer if needed.
    6. If you don't have either, you can heat the skillet on medium-high heat and test the oil by dropping in a small amount of batter. If it is sizzling and frying, then the temperature is good, if not, turn up the heat a little.
    7. Carefully drop large spoonfuls of batter into the oil. As it browns, use a slotted spoon/spatula to flip the fritters and fry on the other side. These should only take 1 1⁄2 – 2 minutes per side. You can test the first fritter to make sure the center is done.
    8. Transfer the fritters to a paper towel to drain and then place on a wire rack to cool slightly.
    9. Once cooled, use a fork to drizzle fritters with icing. Serve!

    Icing

    1. In a small mixing bowl, whisk together powdered sugar and milk, in a small bowl, until smooth and creamy. Set aside until ready to drizzle on the apple cherry fritters.

    Storage

    Leftovers can be stored in an airtight container and kept at room temperature for up to 3 days or in the refrigerator for up to 5 days.

    To reheat, place fritters on a baking sheet and heat in a 350°F oven until warmed through about 10 minutes.
