Instructions
Preheat the oven to 350°F and line a baking dish or baking sheet with parchment paper.
Heat a large skillet or cast-iron pan over medium-high heat. Cook 5 strips bacon until crisp, then transfer to a paper towel–lined plate.
Carefully drain excess bacon grease, leaving about 1 tablespoon in the pan. Add 16 ounces ground pork sausage and cook until browned and fully cooked, breaking it up as it cooks. Remove from heat.
Make the egg mixture in a medium-sized mixing bowl, whisk together 4 large eggs, 2 tablespoons whole milk, ½ teaspoon kosher salt, and ½ teaspoon freshly cracked black pepper. Reheat the cast-iron pan over medium heat, and add 1 tablespoon unsalted butter. Add the egg mixture, and use a spatula to pull the eggs to the center of the pan as soft curds until the eggs are set.
Arrange the bottom halves of the 9 count mini pretzel slider buns (sliced into top buns and bottom buns)in the prepared baking dish. Evenly layer cooked sausage, scrambled eggs, 1 of the 4 slices Colby Jack cheese, and a slice of the bacon. Place top buns on the breakfast mixture.
Melt remaining 2 tablespoons unsalted butter in a microwave-safe bowl. Stir in 1 tablespoon pure maple syrup. Brush generously over the tops of the buns.
Bake uncovered for 10–15 minutes in the preheated oven until the cheese is melted and the buns are warmed through.
Remove from the oven and garnish, if desired with finely chopped fresh parsley (optional garnish). Serve warm and enjoy!
