Chili and Cheese Dip is creamy and full of gooey cheese, and seasoned ground beef for a perfect, hearty appetizer. A great appetizer for gameday, potluck, and family gatherings.
In a large skillet over medium heat, saute 1 pound ground beef, 1 small yellow onion (finely diced), and 1 teaspoon minced garlic until the meat is browned and the onions are soft and translucent. Drain excess fat.
Add 1 (10) ounce can, diced tomatoes with mild green chilies, drained , 1 teaspoon chili powder, ½ teaspoon ground cumin, ¼ teaspoon smoked paprika, ½ teaspoon kosher salt, and ½ teaspoon black pepper. Let simmer for 2-3 minutes.
Reduce the heat to medium-low. Stir in 8 ounces cream cheese (softened) smooth.
Add 1 cup shredded cheddar cheese and ½ cup shredded Monterey Jack cheese, stirring until melted and creamy. Note 3
Transfer to a serving bowl, garnish with optional topping: ½ cup shredded cheddar cheese, ½ cup shredded Monterey Jack cheese, 2 stalks green onion, chopped.
Serve with tortilla chips.
