    How to make Chili Cheese Dip

    Storage - Keep in an airtight covered container in the refrigerator for up to 3 days.

    Eileen's Tips for the Best Cheesy Chili Dip

    • Be sure to brown the ground beef and drain off excess fat.
    • Please take a few minutes and shred your own cheese. Preshredded cheese does not melt well.
    • The dip can be made and kept warm in a slow cooker for your party or celebration.
    • Leftover chili can be used for this dip. Fold in the leftover chili with the cream cheese and shredded cheese mixture.

    Want to change up this recipe?

    • Make it spicier: Add diced jalapeños or a dash of cayenne pepper.
    • Protein: Any favorite protein, such as ground chicken, pork, or turkey, can be used.
    • Beans: Add in your favorite beans, such as black beans, pinto beans, or red beans, to the ground beef mix.
    • Vegetarian version: Swap ground meat for cooked lentils or crumbled tofu.

    Ingredients

    • 1 pound ground beef
    • 1 small yellow onion (finely diced)
    • 1 teaspoon minced garlic Note 1
    • 1 (10) ounce can, diced tomatoes with mild green chilies, drained Note 2
    • 1 teaspoon chili powder
    • ½ teaspoon ground cumin
    • ¼ teaspoon smoked paprika
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 8 ounces cream cheese (softened)
    • 1 cup shredded cheddar cheese
    • ½ cup shredded Monterey Jack cheese

    Optional Garnish

    • ½ cup shredded cheddar cheese
    • ½ cup shredded Monterey Jack cheese
    • 2 stalks green onion, chopped

    Instructions

    • In a large skillet over medium heat, saute 1 pound ground beef, 1 small yellow onion (finely diced), and 1 teaspoon minced garlic until the meat is browned and the onions are soft and translucent. Drain excess fat.
    • Add 1 (10) ounce can, diced tomatoes with mild green chilies, drained , 1 teaspoon chili powder, ½ teaspoon ground cumin, ¼ teaspoon smoked paprika, ½ teaspoon salt, and ½ teaspoon black pepper. Let simmer for 2-3 minutes.
    • Reduce the heat to medium-low. Stir in 8 ounces cream cheese (softened) smooth.
    • Add 1 cup shredded cheddar cheese and ½ cup shredded Monterey Jack cheese, stirring until melted and creamy. Note 3
    • Transfer to a serving bowl, garnish with optional topping: ½ cup shredded cheddar cheese, ½ cup shredded Monterey Jack cheese, 2 stalks green onion, chopped.
    • Serve with tortilla chips.
