- 1 small yellow onion (finely diced)

- 1 (10) ounce can, diced tomatoes with mild green chilies, drained Note 2
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ¼ teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 8 ounces cream cheese (softened)
- 1 cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
Optional Garnish
- ½ cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- 2 stalks green onion, chopped
Instructions
- In a large skillet over medium heat, saute 1 pound ground beef, 1 small yellow onion (finely diced), and 1 teaspoon minced garlic until the meat is browned and the onions are soft and translucent. Drain excess fat.
- Add 1 (10) ounce can, diced tomatoes with mild green chilies, drained , 1 teaspoon chili powder, ½ teaspoon ground cumin, ¼ teaspoon smoked paprika, ½ teaspoon salt, and ½ teaspoon black pepper. Let simmer for 2-3 minutes.
- Reduce the heat to medium-low. Stir in 8 ounces cream cheese (softened) smooth.
- Add 1 cup shredded cheddar cheese and ½ cup shredded Monterey Jack cheese, stirring until melted and creamy. Note 3
- Transfer to a serving bowl, garnish with optional topping: ½ cup shredded cheddar cheese, ½ cup shredded Monterey Jack cheese, 2 stalks green onion, chopped.
