Grilled Chicken Gyros are a delicious meal for any night of the week and a great meal to feed a crowd too! Boneless chicken breasts marinated in Greek yogurt, lime, and seasoning that are grilled and served with diced tomatoes, cucumbers, Tzatziki Sauce, and Pita bread. A perfect meal for any night and a great crowd-pleasing meal.
In a medium-sized mixing bowl, whisk to combine well ⅓ cup non-fat Greek yogurt, 2 Tablespoons lime juice, 1 teaspoon lime zest, 1 teaspoon red wine vinegar, 1 teaspoon olive oil, 2 cloves garlic, peeled and minced, 1 teaspoon dried oregano, ½ teaspoon dried thyme, ½ teaspoon black pepper, and 1 teaspoon kosher salt.
In a large plastic sealable bag, add 1 ½ pounds boneless, skinless chicken breasts and the Greek chicken marinade. Seal the bag and refrigerate for at least one hour, up to overnight.
How to Grill Chicken Gyros
Preheat grill or grill pan to medium-high heat. Brush the grates with olive oil. Remove chicken from the marinade and discard the marinade.
Place the chicken on the preheated grill. Cook the chicken for 8 minutes, flipping halfway through or until the chicken reaches 165°F/74C°C. Use an instant-read meat thermometer to check the internal temperature of the chicken.
Remove the chicken from the grill, cover with aluminum foil, and let rest for 5 minutes. This lets juices set, and the chicken will be juicy.
How to serve Chicken Gyros
Cut the chicken into 1-inch slices. Serve on pita bread or flatbread topped with diced tomatoes, cucumbers, and sliced red onion. Sprinkle Tzatziki Sauce on the chicken gyro.

Pound chicken breasts to about 1 inch thick.
