To the mixture, add in the white sugar and continue to beat together for another 2 minutes until light and fluffy.
Add in the egg, vanilla extract, and almond extract, and beat until just combined. Set aside.
For the dry ingredients, in a medium-sized bowl, whisk together the flour, baking soda, baking powder, cream of tartar, and salt until fully combined
Add the dry ingredients into the wet ingredients, beat until fully incorporated.
Pour the batter into your prepared baking dish and bake for 25-30 minutes, until an inserted toothpick comes out clean.
Allow the cake to cool completely before frosting.
Cream Cheese Frosting
In the bowl or stand mixer with the paddle attachment on low speed or a hand mixer with beaters attached, combine the butter and cream cheese together, until completely combined.
On low speed, beat in the vanilla extract, salt, and 2 cups of confectioners sugar. Be sure to have the mixer on low speed, otherwise the confectioner sugar will go everywhere.
Add additional confectioner sugar, as needed. After 20 seconds and the confectioner surge sugar is blended, increase to medium/high speed and blend another 2 minutes. The frosting will be ready to use.
Use an offset spatula to spread the cream cheese frosting on the cake.
Add Holiday sprinkles for a festive touch.
Notes
Be sure to check Expert Tips and FAQs above with important tips and questions that can help make a delicious recipe. Note 1: I prefer to use unsalted butter and add salt in to the recipe. If using salted butter, do not add salt.Note 2: We use low-fat cream cheese as it adds amazing flavor with a slightly lower calorie count. Full-fat cream cheese or Neufchatel cheese can be substituted instead of low-fat cream cheese.Note 3: Once the frosting is made, give it a taste and if needed, add a bit more vanilla extract. Note 4: Start with 3 cups and add more according to your preference for the thickness of the frosting.Note 5: This cake can be made for any holiday. Adjust your sprinkles to the festive day of celebration.
