    Enjoy our Sugar Cookie Cake that can be adapted for any Holiday. This is a mouthwatering cake that is loaded with rich and creamy from cream cheese and the warm sugar flavors. I have adapted this cake for the Christmas season but it can be made for any Holiday.

    Ingredients

    Ingredients to make a sugar cookie cake recipe.

    • all-purpose flour
    • cream cheese
    • baking soda
    • baking powder
    • cream of tartar
    • salt
    • egg
    • vanilla extract
    • almond extract
    • unsalted butter

    Equipment

    • Measuring Spoons and Cups
    • 9" x 13" baking pan with lid
    • Hand Mixer
    • angled spatula

    🔪 Instructions

    This is an overview of the recipe. The full instructions are below in the recipe card.

    1. Preheat oven to 350F/177°C. Spray a 9" x 13" baking dish or casserole dish and set aside
    2. In a large mixing bowl, using an electric hand mixer with beaters attached on low speed, cream together the butter, cream cheese and sugar until well combined, about 5 minutes. The mixture will be pale yellow, light, and fluffy.
    3. Add in the egg, vanilla extract, and almond extract, and beat until just combined. Set aside.
    4. For the dry ingredients, in a medium-sized bowl, whisk together the flour, baking soda, baking powder, cream of tartar, and salt until fully combined
    5. Add the dry ingredients into the wet ingredients, beat until fully incorporated.
    6. Pour the batter into your prepared baking dish and bake for 25-30 minutes, until an inserted toothpick comes out clean.
    7. Allow the cake to cool completely before frosting.

    Cream Cheese Frosting

    1. In the bowl or stand mixer with the paddle attachment on low speed or a hand mixer with beaters attached, combine the butter and cream cheese together, until completely combined.
    2. On low speed, beat in the vanilla extract, salt, and 2 cups of confectioners sugar. Be sure to have the mixer on low speed, otherwise the confectioner sugar will go everywhere.
    3. Add additional confectioner sugar, as needed. After 20 seconds and the confectioner surge sugar is blended, increase to medium/high speed and blend another 2 minutes. The frosting will be ready to use.
    4. Use an offset spatula to spread the cream cheese frosting on the cake.
    5. Add Holiday sprinkles for a festive touch. 

    How to store, reheat, and freeze

    • After baking and frosting, the leftovers can be kept in the refrigerator in a covered airtight container for 2-3 days.
    • Once baked, you can freeze the cake, unfrosted in a well-sealed freezer safe bag for 2-3 months. Defrost in the fridge, overnight. Let the cake come to room temperature before frosting. It is nice having a cake in the freezer for unexpected events. This is also great for Holiday or party baking.

    💭 Expert Tips

    For best results, have your dairy and eggs at room temperature. This will allow everything to blend together nicely for excellent results.

    • For best results, haveBe sure to let your cake cool completely before frosting it.
    • When making the frosting, ensure your mixer is on low when you begin to add confectioners sugar. Otherwise, you may be covered in sugar and no one wants that.

    Is this sugar cookie cake more like a cookie or cake?

    Sugar Cookie Cake is light, creamy fluffy cake, not at all like a cookie.

    Can other extracts be added to the cake?

    Absolutely, lemon or maple extracts would both be delicious choices.

    Do you want to change up this recipe? Here are some ways that you increase the flavor of this dish.

    • Change up the frosting  and decorating, depending on your Holiday. From simple Christmas colors to romantic Valentine hearts, this will be your go-to dessert.
    • Add orange food coloring and sprinkles for a Halloween cake.
    • Add pink food coloring for Valentine's day.
    • You get the idea, vary the sprinkles and colors to celebrate any holiday.

    Serving Suggestions

    Having a holiday dessert table, serve a peppermint cocktail for the over 21 crowd.

    For the under 21 crowd, serve a Gumdrop Punch for a refreshing drink.

    Instructions

    How to Make a Sugar Cookie Cake

    • Preheat oven to 350F/177°C. Spray a 9" x 13" baking dish or casserole dish and set aside

    • To the mixture, add in the white sugar and continue to beat together for another 2 minutes until light and fluffy.
    • Add in the egg, vanilla extract, and almond extract, and beat until just combined. Set aside.
    • For the dry ingredients, in a medium-sized bowl, whisk together the flour, baking soda, baking powder, cream of tartar, and salt until fully combined
    • Add the dry ingredients into the wet ingredients, beat until fully incorporated.

    Note 1: I prefer to use unsalted butter and add salt in to the recipe. If using salted butter, do not add salt.
    Note 2: We use low-fat cream cheese as it adds amazing flavor with a slightly lower calorie count. Full-fat cream cheese or Neufchatel cheese can be substituted instead of low-fat cream cheese.
    Note 3: Once the frosting is made, give it a taste and if needed, add a bit more vanilla extract. 
    Note 4: Start with 3 cups and add more according to your preference for the thickness of the frosting.
    Note 5: This cake can be made for any holiday. Adjust your sprinkles to the festive day of celebration.
