How to make Baileys Cupcakes

- In a bowl, whisk together 1 cup canola oil, 2 large egg whites, ⅓ cup heavy cream, 3.4 ounces whole milk, and ¼ cup Baileys Irish Cream until well combined
- To the same mixing bowl, sift in ¾ cup granulated sugar, 1 cup all-purpose flour, 3 Tablespoons unsweetened cocoa powder½ teaspoon baking powder, and ¼ teaspoon baking soda. Mix until just combined.
- Fill each cupcake liner about ⅔ full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely.
How to make Baileys Buttercream Frosting
- While the cupcakes are baking, prepare the frosting: In a large mixing bowl, using an electric hand mixer with beaters attached, cream ¾ cup unsalted butter until creamy.
- To the creamed butter, sift in 2 cups powdered sugar Add 3 Tablespoons Baileys Irish Cream, and 1 teaspoon vanilla extract, beat until smooth and fluffy.
