    How to make the cosmic brownies

    1. Preheat oven to 350°F. Line a 9x13-inch baking dish with parchment paper.

    1. Add the sugar, light brown sugar, vanilla extract, eggs, egg yolks, cocoa powder, and vegetable oil, stir until combined.

    • Make sure that you line your baking dish with parchment paper. This will allow you to remove the brownies smoothly and cleanly.
    • Be careful not to overmix the brownie batter after adding the flour. You want to mix it until just combined.
    • Don't overbake the brownies; otherwise, you end up with dry brownies. So, watch them closely in the oven.

    Vary Ingredients for these Holiday Brownies

    Do you want to change up this recipe? Here are some ways to change the flavor of this dish.

    • Candy Melts: Can't find green candy melts? You can use red or even chocolate melts instead. They will still work the same.
    • Rainbow Chips: If you can't find the rainbow chips, you can also use rainbow sprinkles.
    • Cookie Cutter: Don't have a Christmas tree cookie cutter? Use a triangle cookie cutter instead.
    • Holiday: This recipe works with any holiday; change the icing color and the cookie cutter shape.
    • Ganache: A homemade frosting or store-bought frosting can be used for the brownies

    Make-Ahead: The brownies can be made up to 3 days ahead and wrapped in plastic wrap or in an airtight container. Decorate with ganache the day of serving them.

    Storage - Store the cosmic brownies in an airtight container at room temperature for up to three days.

    Freezing - You can also freeze the brownies, undecorated, wrapped in plastic wrap and placed in a freezer bag for up to three months. Thaw at room temperature and then decorate with the ganache before enjoying.

    Ingredients

    • ½ cup unsalted butter , melted
    • 8 ounces semisweet chocolate chips
    • 1 cup granulated white sugar
    • 1 cup light brown sugar
    • 2 teaspoons pure vanilla extract
    • 2 large eggs
    • 2 egg yolks
    • ¼ cup unsweetened cocoa powder
    • ½ cup vegetable oil
    • 1¼ cup all-purpose flour

    Ganache

    • 4 Tablespoons unsalted butter
    • ½ cup sweetened condensed milk
    • 10 ounces green candy melts
    • ¼ cup rainbow chip sprinkles

    Instructions

    • Preheat oven to 350°F/177°C. Line a 9 x 13-inch baking dish with parchment paper.
    • In a large microwave-safe mixing bowl, combine ½ cup unsalted butter and 8 ounces semisweet chocolate chips. Melt in the microwave in 30-second intervals, until melted and smooth.
    • To the chocolate mixture, add 1 cup granulated white sugar, 1 cup light brown sugar, 2 teaspoons pure vanilla extract, 2 large eggs, 2 egg yolks , ¼ cup unsweetened cocoa powder, and ½ cup vegetable oil. Stir to combine ingredients.
    • Stir 1¼ cup all-purpose flour into the chocolate mixture. Note 1
    • Spread the brownie batter into the prepared pan.
    • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Set aside.

    How to make the Ganache

    • In a small saucepan over low heat, add 4 Tablespoons unsalted butter, ½ cup sweetened condensed milk, and 10 ounces green candy melts, stirring until smooth. Remove from the heat.
    • Top the cooled brownies with the ganache and spread it over the brownies. Quickly sprinkle the brownies with the ¼ cup rainbow chip sprinkles
    • Set aside to cool completely.
    • Once cool, use the Christmas tree cookie cutter and cut out trees.
    • The Christmas tree brownies are ready to serve.
