Place ⅓ cup milk chocolate melting chocolate, ⅓ cup white chocolate melting wafers, and ⅓ cup ruby red melting wafers into separate small mixing bowls. Melt each chocolate in the microwave in 30-second intervals, stirring between each cycle, until fully smooth (about 4–6 cycles depending on microwave power).
Holding each of the 20 large fresh strawberries (stems attached)by the stem, dip it into one of the melted chocolates and place it on a baking tray lined with parchment paper. Let the strawberries set for 5–10 minutes.
Transfer the remaining melted chocolate from the bowls into 3 small piping bags.
Snip a very small tip off each piping bag and drizzle patterns over the strawberries using different chocolate colors.
Decorate each strawberry evenly with the 2 Tablespoons Valentine sprinkles. Leave at room temperature or refrigerate until the chocolate is fully set.
