Pork Chops and Potatoes is an easy skillet recipe that is a perfect weeknight meal. Tender, juicy pork chops coated in a savory honey garlic glaze that caramelizes beautifully. Paired with buttery yellow potatoes makes for a hearty meal full of comfort.

In a medium-sized pot over medium heat, add 1 pound baby potatoes, enough water to cover the potatoes, and 1 teaspoon kosher salt . Bring the water to a boil, uncovered. Continue to boil the baby potatoes until fork tender, about 10 minutes.
Drain and set aside.
Honey Garlic Pork Chops
While the potatoes are boiling, season both sides of 4( 4-5) ounce boneless pork chops, 1 teaspoon garlic salt, 1 teaspoon black pepper.
In a large skillet over medium-high heat, melt 1 Tablespoon unsalted butter .
Add the seasoned pork chops to the pan and cook on each side for 4-6 minutes per side depending on their thickness. If needed, add 1 Tablespoon unsalted butter to the pan
Once the pork chops are cooked remove them from the pan and set aside.
To the hot pan, add 6 cloves minced garlic,½ cup honey, ½ cup chicken stock, 2 ½ Tablespoons apple cider vinegar, and 2 Tablespoons soy sauce.
Whisk the sauce over medium high heat until the sauce reduces and thickens slightly, about 5-8 minutes.
Add the potatoes to the pan and toss to coat them in the sauce.
Add the pork chops and coat in the sauce.
Optional, garnish with fresh chopped parsley and chopped green onions if desired. Ready to serve.
