Honey Pork Chops and Potatoes

- In a medium-sized pot over medium heat, add 1 pound baby potatoes, enough water to cover the potatoes, and 1 teaspoon kosher salt . Bring the water to a boil, uncovered. Continue to boil the baby potatoes until fork tender, about 10 minutes.
- Drain and set aside.
- While the potatoes are boiling, season both sides of 4( 4-5) ounce boneless pork chops, 1 teaspoon garlic salt, 1 teaspoon black pepper.
- In a large skillet over medium-high heat, melt 1 Tablespoon unsalted butter .
- Add the seasoned pork chops to the pan and cook on each side for 4-6 minutes per side depending on their thickness. If needed, add 1 Tablespoon unsalted butter to the pan
- Once the pork chops are cooked remove them from the pan and set aside.
- To the hot pan, add 6 cloves minced garlic,½ cup honey, ½ cup chicken stock, 2 ½ Tablespoons apple cider vinegar, and 2 Tablespoons soy sauce.
- Whisk the sauce over medium high heat until the sauce reduces and thickens slightly, about 5-8 minutes.
- Add the potatoes to the pan and toss to coat them in the sauce.
- Add the pork chops and coat in the sauce.
- Optional, garnish with fresh chopped parsley and chopped green onions if desired. Ready to serve.
