Eileen's Tips for Success
- Instead of butter to saute the boneless chops, you can also use a favorite neutral-flavored oil, such as olive oil, or canola oil.
- Sear the pork chops until they are golden brown on each side. To prevent them from overcooking use a meat thermometer to monitor the internal temperature.
- If you don't have chicken stock, you can use chicken broth. However, chicken stock has a lot more flavor.
- When adding the chicken stock, use a wooden spoon to scrape the bottom of your skillet to remove all the browned bits because that's where the flavor is.
- For those who need low-sodium ingredients, use low-sodium soy sauce and sodium-free chicken stock.
- Gluten-free - use tamari or coconut aminos.
Frequently Asked Questions
To get the perfect juicy chops use an instant-read thermometer to ensure the internal temperature of the pork reaches 145°F.
Pork chops can dry out quickly in the microwave, so I recommend that you reheat them on 50% power until they are warm all the way through. Depending on how thick they are, this can take 1-2 minutes or 3-4 minutes for thicker pork chops
Variations
Do you want to change up this recipe? Here are some ways to change the flavor of this dish.
- I use boneless pork chops, but bone-in pork chops will work well in this recipe; however, the cooking time will need to increase and ensure pork is cooked to 145°F.
- Protein: This recipe works for thin-cut chicken breasts.
- Spice: Add a pinch of cayenne pepper or red pepper flakes to the sauce.
- Out of fresh garlic? No worries, you can use garlic powder in the saucy glaze instead.
Make ahead, storage, and freezer tips
Storage - Store leftovers in an airtight container in the fridge for 2-3 days.
Freezing - I don't recommend freezing the leftover potatoes because they do not freeze well.
The pork chops can be frozen for up to 3 months in an airtight freezer-safe container.
To reheat, thaw in the fridge overnight and then reheat in the oven at
375 °F for about 10-15 minutes until heated.
