    1. Season the pork chops on both sides and then cook in a hot skillet for 4-6 minutes per side. Remove them from the pan and set aside.

    1. Add the sauce ingredients to the skillet, simmer until the sauce thickens. Add the cooked potatoes and pork chops back to the skillet.

    Eileen's Tips for Success

    1. Instead of butter to saute the boneless chops, you can also use a favorite neutral-flavored oil, such as olive oil, or canola oil. 
    2. Sear the pork chops until they are golden brown on each side. To prevent them from overcooking use a meat thermometer to monitor the internal temperature. 
    3. If you don't have chicken stock, you can use chicken broth. However, chicken stock has a lot more flavor. 
    4. When adding the chicken stock, use a wooden spoon to scrape the bottom of your skillet to remove all the browned bits because that's where the flavor is.
    5. For those who need low-sodium ingredients, use low-sodium soy sauce and sodium-free chicken stock.
    6. Gluten-free - use tamari or coconut aminos.

    What should the internal temperature of pork chops be? 

    To get the perfect juicy chops use an instant-read thermometer to ensure the internal temperature of the pork reaches 145°F.

    What is the best way to reheat pork chops in the microwave? 

    Pork chops can dry out quickly in the microwave, so I recommend that you reheat them on 50% power until they are warm all the way through. Depending on how thick they are, this can take 1-2 minutes or 3-4 minutes for thicker pork chops

    Do you want to change up this recipe? Here are some ways to change the flavor of this dish.

    • I use boneless pork chops, but bone-in pork chops will work well in this recipe; however, the cooking time will need to increase and ensure pork is cooked to 145°F.
    • Protein: This recipe works for thin-cut chicken breasts. 
    • Spice: Add a pinch of cayenne pepper or red pepper flakes to the sauce. 
    • Out of fresh garlic? No worries, you can use garlic powder in the saucy glaze instead. 

    Make ahead, storage, and freezer tips

    Storage - Store leftovers in an airtight container in the fridge for 2-3 days. 

    Freezing - I don't recommend freezing the leftover potatoes because they do not freeze well.

    The pork chops can be frozen for up to 3 months in an airtight freezer-safe container.

    To reheat, thaw in the fridge overnight and then reheat in the oven at

    375 °F for about 10-15 minutes until heated.

    • 1 teaspoon salt

    • 6 cloves minced garlic
    • ½ cup honey
    • ½ cup chicken stock
    • 2 ½ Tablespoons apple cider vinegar
    • 2 Tablespoons soy sauce

    Instructions

    How to cook baby potatoes

    • In a medium-sized pot over medium heat, add 1 pound baby potatoes, enough water to cover the potatoes, and 1 teaspoon salt . Bring the water to a boil, uncovered. Continue to boil the baby potatoes until fork tender, about 10 minutes.
    • Drain and set aside.

    Honey Garlic Pork Chops

    • While the potatoes are boiling, season both sides of 4( 4-5) ounce boneless pork chops, 1 teaspoon garlic salt, 1 teaspoon black pepper.
    • In a large skillet over medium-high heat 1 Tablespoon unsalted butter 1 Tablespoon unsalted butter to melt.
    • Add the seasoned pork chops to the pan and cook on each side for 4-6 minutes per side depending on their thickness. If needed, add 1 Tablespoon unsalted butter to the pan
    • Once the pork chops are cooked remove them from the pan and set aside.
    • To the hot pan, add 6 cloves minced garlic,½ cup honey, ½ cup chicken stock, 2 ½ Tablespoons apple cider vinegar, and 2 Tablespoons soy sauce.
    • Whisk the sauce over medium high heat until the sauce reduces and thickens slightly, about 5-8 minutes.
    • Add the potatoes to the pan and toss to coat them in the sauce.
    • Add the pork chops and coat in the sauce.
    • Optional, garnish with fresh chopped parsley and chopped green onions if desired. Ready to serve.
