    Roasted Asparagus with Lemon and Garlic is a delicious side dish for any meal! Perfect for a spring celebration, Easter, or any Holiday. Quick, easy and always a crowd pleaser. Great to serve with:

    Tips to make Roasted Asparagus

    • It takes about 5 minutes to prepare and 10 minutes in a 400 degree oven!
    • If using large asparagus, peel the stalks with a vegetable peeler, which reduces toughness.
    • Thin asparagus, no need to peel.
    • If using White Asparagus, peel them as they are usually thick and peeling reduces toughness.

    Such a tasty side dish.  The lemon adds a perfect amount of flavor to complement the asparagus.

    • baking sheet
    • Measuring Spoons and Cups

    Ingredients

    • 1 pound fresh asparagus spears
    • 1 Tablespoon olive oil
    • 2 Tablespoons lemon juice about ½ lemon
    • 5 slices lemon thinly sliced, about ½ lemon
    • 1 Tablespoon lemon zest about ½ lemon
    • 2 cloves garlic finely minced
    • ½ teaspoon Kosher salt
    • ½ teaspoon black pepper

    Instructions

    • Preheat oven to 425°F/ 218°C. Trim the ends of the asparagus. Note 1
    • Place 1 pound of asparagus stalks on a baking sheet.
    • Drizzle 1 Tablespoon olive oil on the asparagus spears to coat them well with the oil. to coat the asparagus spears.
    • Add the lemon juice, lemon, lemon zest, minced garlic, and salt and pepper to taste.
    • Roast for 8-10 minutes.

    NOTES

     
    Note 1: The ends of the asparagus stalks can be used for vegetable stock.  If asparagus spears are thick peel the asparagus for a more tender result.
