roasted asparagus with lemon and garlic

Roasted Asparagus with Lemon and Garlic is a delicious side dish for any meal! Perfect for a spring celebration, Easter, or any Holiday. Quick, easy and always a crowd pleaser. Great to serve with:

Baked Parmesan Chicken Tenders  Honey Mustard Sauce

     Lightened Up Mac and Cheese,

     Easy Greek Chicken Salad

Detox Blueberry Lemon Ginger Iced Tea
    Greek Salad

    Tips to make Roasted Asparagus

    • It takes about 5 minutes to prepare and 10 minutes in a 400 degree oven!
    • If using large asparagus, peel the stalks with a vegetable peeler, which reduces toughness.
    • Thin asparagus, no need to peel.
    • If using White Asparagus, peel them as they are usually thick and peeling reduces toughness.

Such a tasty side dish.  The lemon adds a perfect amount of flavor to complement the asparagus.

PERFECT combo for asparagus. I'm guilty of munching on my asparagus before it ever hits the sheet pan... so if I have any leftover, I'll be making this!

You're going to laugh, I think, but the ONE time I had asparagus, my brother-in-law said he wanted to treat us to a special meal. He was excited about getting a new smoker. I LOVE smoked fish, cheese, sausages ... oh, yea. So he was going to smoke asparagus and chicken breasts. Sounds good, right?

He used spruce sticks from his back yard. Spruce. I was six months pregnant and gagged down overly-smokey, spruce-flavoured asparagus and chicken, or as much as I could stomach.

It's been almost nine years .... I really should get up the courage to try asparagus that hasn't been smoked in spruce, right? Lemon and garlic sound absolutely perfect!

I love asparagus but my kids don't so I don't tend to buy it too often because I'll be the only one eating it. I make something like this and it's absolutely delish! I'm sure this is too!
