      Eileen's Tips for Success

      • I prefer the flavor of fresh garlic cloves in this dish, however, if you don't have fresh garlic on hand you can use the minced garlic or garlic powder instead.
      • Make sure that you cover your baking dish with aluminum foil so that the peppers steam and soften while they are in the hot oven.
      • You can use any type of cooked rice for these Greek-style stuffed peppers. I like to use arborio rice or basmati rice but any type will work.

      Variations

Here are some ways to vary the flavors of the recipe.

      • Use ground beef or ground lamb to make these Greek-style peppers. However, you can also use ground turkey or ground chicken.
      • Feel free to get creative with seasonings in this simple recipe. Add fresh dill or your other favorite fresh herbs for even more flavor.
      • Out of tomatoes? You can use a jar of your favorite marinara sauce instead of canned tomatoes for the beef mixture.

Make ahead, storage, and freezer tips

Make ahead - To prep the peppers ahead, cover the casserole dish with foil or plastic wrap and store it in the fridge until you are ready to bake them.

Storage - Store leftover Greek-style stuffed peppers in an airtight container in the fridge for 3-4 days.

Freezing Tips -  These stuffed peppers freeze very well! If you have leftovers or just want to make a batch for later, place the cooked and cooled peppers in a single layer on a baking sheet and freeze until solid. Then transfer them to a freezer-safe container or bag. They will keep well in the freezer for up to 3 months.
