🔪 Instructions

  1. Preheat the oven to 350°F. Line a large baking sheet with aluminum foil. Set aside.
  2. In a large mixing bowl, combine the ground beef, onion, pickles, crushed Ritz crackers, Worcheshire sauce, Thousand Island dressing, salt, and black pepper. Mix well until everything is combined.
  3. On the prepared baking sheet, form the meat mixture into 6 equal mini loaf shapes.
  4. Bake in the preheated oven for 40-45 minutes. The beef should reach an internal temperature of 165°F when fully cooked.
  5. When the individual meatloaves are done remove them from the oven and immediately top each one with a slice of American cheese. It will melt into the mini meatloaf.
  6. When serving, drizzle each meatloaf with Thousand Island dressing. Top with diced pickles, onions, and shredded lettuce.

Storage

Leftover mini meatloaves will keep in the fridge, stored in a covered airtight container, for 3-4 days.

Freezer Instructions:You can also freeze these meatloaves for up to 3 months. Thaw overnight in the fridge before reheating.

Individual meatloaves can be reheated in the oven, microwave, or even on the grill.

Oven: Preheat the oven to 350°F. Place mini meatloaves on a baking sheet and heat until warmed through, about 10-15 minutes.

Microwave: Place the meatloaf on a microwave-safe plate and heat for 1-2 minutes, or until warmed through.
