    This Big Mac Mini Meatloaf recipe is just like the Big Mac Burger, but much easier to make and enjoy. This recipe is the ultimate comfort food.

    🔪 Instructions

    1. Preheat the oven to 350°F. Line a large baking sheet with aluminum foil. Set aside.
    2. In a large mixing bowl, combine the ground beef, onion, pickles, crushed butter crackers, Worcestershire sauce, Thousand Island dressing, salt, and black pepper. Mix well until everything is combined.
    3. On the prepared baking sheet, form the meatloaf mixture into 6 equal mini loaf shapes.
    4. Bake in the preheated oven for 40-45 minutes. The beef should reach an internal temperature of 165°F when fully cooked.
    5. When the individual meatloaves are done remove them from the oven and immediately top each one with a slice of American cheese. It will melt into the mini meatloaf.
    6. When serving, drizzle each meatloaf with Thousand Island dressing, diced pickles, onions, and shredded lettuce.

    Storage

    Leftover mini meatloaves will keep in the refrigerator in a covered covered airtight container for 3-4 days.

    Freezer Instructions: You can freeze these meatloaves for up to 3 months. Thaw overnight in the refrigerator before reheating.

    Reheating Instructions

    Individual meatloaves can be reheated in the oven, microwave, or even on the grill.

    Oven: Preheat the oven to 350°F. Place mini meatloaves on a baking sheet and heat until warmed through, about 10-15 minutes.

    Microwave: Place the meatloaf on a microwave-safe plate and heat for 1-2 minutes, or until warmed through.
