Step 1: Season the flank steak well on both sides. Lightly pat the seasonings into the meat.
Step 2: Heat a heavy skillet with enough olive oil to coat the bottom. Once the oil and skillet are hot sear the steak on both sides for 3 minutes per side.
Step 3: While the steak is browning add the onions to the bottom of the slow cooker.
Step 4: Once the steak is brown add it to the slow cooker on top of the onions. Pour the red wine vinegar into the skillet, scraping to remove any stuck-on pieces. Mix in the Dijon mustard with the red wine vinegar. Pour the sauce over the steak.
Step 5: Place the lid on the slow cooker. and cook on low for 4 hours. The meat will be tender and cooked through. Transfer to the cutting board, and let the steak rest for 10 minutes.
Step 6: Slice the steak against the grain, and then return the steak to the slow cooker or serve on a platter with the onions and juices.

Equipment Needed:

Ingredients
- 2 pound flank steak
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- ½ teaspoon granulated white sugar
- ½ teaspoon salt , to taste
- ½ teaspoon black pepper
- 1 Tablespoon olive oil
- 2 Tablespoons red wine vinegar
- ½ teaspoon Dijon mustard
- 1 medium yellow onion peeled and sliced thin
Instructions
- Season all sides of the streak with the seasoning.
- Heat a heavy skillet or cast iron pan over medium-high heat. Add 1 of olive oil and swirl around the skillet. Add the steak to the skillet and cook until browned without moving, about 3 minutes per side.
- While the steak is browning, spread the onions in the bottom of the slow cooker.
- When the steak is browned on both sides, transfer the steak to the slow cooker and place it on top of the sliced onions.
- Pour the red wine vinegar into the skillet, scraping to remove any stuck on pieces. Mix in the Dijon mustard into the red wine vinegar. Pour the sauce over the steak.
- Place the lid on the slow cooker. and cook on low for 4 hours. The meat will be tender and cooked through.
- Transfer the steak to a cutting board. Let the steak rest for 10 minutes. Thinly slice the steak, against the grain.
- Return the steak to the slow cooker or serve on a platter with the onions and juices.
