- 1 (14) ounce package, andouille sausage cut in half, lengthwise, sliced into 1-inch pieces
- 1 small yellow onion peeled and chopped
- 1 small green bell pepper seeded and diced
- 1 small red bell pepper seeded and diced
- 6 Tablespoons unsalted butter
- 6 Tablespoons all-purpose flour
- 4 cups whole milk
- 2 teaspoons Cajun seasoning homemade or store-bought
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 (8) ounce block, shredded sharp cheddar cheese
- 1 (8) ounce block, shredded jack cheese

Instructions
- Preheat the oven to 400°F. Prepare a 9" x 13" casserole dish with nonstick cooking spray.
- Cook the elbow macaroni according to package directions.
- In a large skillet or Dutch oven over medium-high heat, add the olive oil, sausage, onion, green bell pepper, and red bell pepper, cook for approximately 6 to 8 minutes or until the vegetables have begun to soften.
- Remove the sausage and vegetables from the skillet. Set aside.
