Instant Pot Pork Tenderloin, ready in less than 30 min. Use a marinated Smithfield Rotisserie Tenderloin root veggies to make an easy flavorful dinner.
Make the pork spice rub, in a small mixing bowl, combine and whisk together ½ teaspoon Italian seasoning, ½ teaspoon dried thyme, ½ teaspoon kosher salt, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon paprika, and ¼ teaspoon black pepper. Liberally coat 1 ½ pounds pork tenderloin in the dry rub. Set aside.
How to Make Instant Pot Pork Tenderloin and Vegetables
Turn the Instant Pot on to sauté. Once it is hot, add 1 tablespoon olive oil. Place the seasoned pork tenderloin into the Instant Pot. Sear the pork until browned on all sides, about 3 to 5 minutes. Remove the pork and set it on a cutting board or plate.
Add ½ can of fat-free chicken stock. Use a wooden spoon to bring up brown bits from the bottom of the vessel. (Note 2) Add the remaining chicken broth. Press Cancel to stop the saute function.
Place the trivet into the cooking insert. Add 3 cups yellow potatoes (cut into 2-inch cubes) and 2 cups carrots (peeled and sliced ¼ inch thick)
Add the browned pork tenderloin on top of the veggies and stock. Seal the Instant Pot. Ensure the valve is closed. Press "Pressure Cooker" on high heat, set the timer to 5 minutes. Once the cycle is complete, allow a natural release for about 10 minutes.
Remove the pork tenderloin. Let it rest for 5 to 10 minutes.
Optionl, to thicken the broth, in a small bowl, whisk 1 Tablespoon cornstarch and 1 Tablespoon cold water together. Mix into the juices in the Instant Pot. Hit Saute and let the ingredients blend for about 5-6 minutes to thicken the sauce.
Slice the pork ½ inch thick and serve with the veggies and juices.
