Preheat oven to 410°/210°C Line a baking tray with a silicone mat or parchment paper. Set to the side.
In the bowl of a stand mixer, using the paddle attachment or a large mixing bowl use a hand mixer with whisk attachment, add unsalted butter, white sugar, and light brown sugar. Mix on medium speed for 3-4 minutes until the butter mixture is creamy and well incorporarted.
Add the eggs, one at a time, blend, and vanilla extract. Mix until creamy
In a large mixing bowl, whisk together cake flour, all-purpose flour, cornstarch, baking soda, and salt. Whisk until combined.
Add the flour mixture to the butter mixture slowly. Mix on low speed to begin and then medium speed, until combined. ( Do not over mix)
Stir in the chocolate chips and walnuts to the dough and mix on low speed until combined.
Scoop out the dough with a cookie / ice cream scoop. Roll the dough in your hands to form a ball. Place the dough on the baking tray and lightly press down to lightly flatten lightly
Bake the cookies for 8-10 minutes. Remove from the oven slightly, Transfer cookies to a wire rack to cool completely. Enjoy!
