- Preheat oven to 410°. Line a baking tray with a silicone mat or parchment paper. Set to the side.
- In the bowl of a stand mixer, using the paddle attachment or a large mixing bowl use a hand mixer with whisk attachment, add unsalted butter, white sugar, and light brown sugar. Mix on medium speed for 3-4 minutes until the butter mixture is creamy and well incorporarted.
- Add the eggs, one at a time, blend, and vanilla extract. Mix until creamy
- In a large mixing bowl, whisk together cake flour, all-purpose flour, cornstarch, baking soda, and salt. Whisk until combined.
- Add the flour mixture to the butter mixture slowly. Mix on low speed to begin and then medium speed, until combined. ( Do not over mix)
- Stir in the chocolate chips and walnuts to the dough and mix on low speed until combined.
- Scoop out the dough with a cookie / ice cream scoop. Roll the dough in your hands to form a ball. Place the dough on the baking tray and lightly press down to lightly flatten lightly
- Bake the cookies for 8-10 minutes. Remove from the oven slightly, Transfer cookies to a wire rack to cool completely. Enjoy!
