    • baking soda
    • unsweetened cocoa powder
    • unsalted butter
    • white granulated sugar
    • large egg
    • peppermint extract
    • semi-sweet chocolate chips

    Mint Frosting

    • white frosting store-made frosting works well
    • peppermint extract
    • 3-4 drops green food coloring add more drops if you want a darker color to the frosting
    • mini semi-sweet chocolate chips

    Instructions

    1. In a large mixing bowl, using an electric hand mixer with the beaters attached, cream together unsalted butter and sugar in a medium bowl.

    2. To the butter/sugar mixture, add egg and peppermint extract, mix well.

    3. Add in all-purpose flour, unsweetened cocoa powder, and baking soda, combine until a soft dough forms.

    4. Fold in chocolate chips.

    5. Drop 8-10 large scoops of dough onto a parchment paper-lined baking sheet.

    6. Bake at 350°F.177°C for 12- 14 minutes. Begin checking cookies at 12 minutes. They should be soft to the touch.

    7. Remove from oven and let cool for a minute. Then move them to a cooling rack to finish cooling before frosting.

    Mint Frosting

    1. In a medium-size mixing bowl, mix the white frosting, peppermint extract, and food coloring.
    2. Use a knife to spread the frosting on each cookie. Top the frosting with mini chocolate chips.

    Storage

    Store the cookies in an airtight container for up to 5 days.

    Freezing Instructions: The cookies can be frozen after being baked, without frosting in an airtight freezer-safe bag for up to 3 months. Defrost in the refrigerator when ready to eat.

    • Preheat oven to 350°F/177°C. Line a baking sheet with parchment paper and set aside.
    • In a medium-sized mixing bowl whisk dry ingredients together flour, baking soda, salt, and cocoa powder. Set aside.
    • In a large mixing bowl, using an electric hand mixer with the beaters attached, cream together unsalted butter and sugar.
    • To the butter mixture, using the hand mixer at low speed, add egg and peppermint extract, and beat for about 1 minute more to combine the ingredients.
    • Fold the dry ingredients into the butter mixture until a soft dough forms.
    • Fold in chocolate chips.
    • Drop 8-10 large scoops of dough onto the prepared baking sheet.
    • Bake in the preheated oven for 12- 14 minutes. Begin checking cookies at 12 minutes. They should be soft to the touch.
    • Remove from oven and let cool for a minute. Then move the cookies to a cooling rack to finish cooling before frosting.

    Mint Frosting

    • In a medium-sized mixing bowl, mix the white frosting, peppermint extract, and food coloring.
