Ingredients

  • water, room temperature
  • active dry yeast
  • unsalted butter softened
  • large egg
  • bread flour
  • granulated white sugar
  • salt
  • salted butter, melted for brushing the tops of rolls

Instructions

  1. In a small bowl, whisk together water and yeast. Allow it to proof for five minutes.
  2. In a large mixing bowl, add unsalted butter, egg, flour, sugar, and salt. Mix well. Once the yeast is done proofing, add it to the butter mixture Mix again.
  3. Transfer dough to a flat lightly floured work surface.
  4. In the bowl of a stand mixer, use the dough hook attachment, knead for about five minutes until the dough ball is round and soft. This can be done by using your hands and knead for 10 minutes.
  5. Cut into 16 dough balls. Roll into small balls and set aside.
  6. Pinch the bottom of each roll to make your role stay together (see process picture).
  7. Let the dough rise for an additional 30 minutes. Cover with a clean cotton towel or plastic wrap.
  8. While the rolls are rising, preheat your oven to 375°F/191°C.
  9. Transfer the rolls (pinch side down) to a greased cookie sheet. You may need one large cookie sheet or two small cookie sheets.
  10. Bake for 12 to 15 minutes, or until golden brown.
  11. Once out of the oven, brush with your melted butter
  12. Serve and enjoy.

Storage

These homemade rolls will last for up to four days stored in an airtight covered container at room temperature.

Freezer Instructions

Once baked and cooled, the rolls can be placed on a baking sheet without touching in the freezer for about ½ hour or until they are frozen. The frozen rolls can be then placed in a freezer-safe storage bag or container for up to 4 months.

The rolls will not stick together because they are placed in the freezer container when they are already frozen. As needed, remove the rolls from the freezer and let them defrost in the refrigerator overnight. Wrap the rolls in aluminum foil, reheat at 350°F for about 10 minutes, or until rolls are heated through.

Expert Tips

Expert Tip: For yeast to bloom fully, I recommend using water that is no warmer than  105°F and no cooler than 95°F.

  • If you don't have a stand mixer, you can knead this dough by hand for 10 minutes. Or, if you have a bread machine you can knead it in the bread machine for 10 minutes on the knead setting.
  • I like to cover my rolls with a flour sack towel because it's lightweight and won't prevent the rolls from rising.
  • You can also brush the tops of these homemade rolls with honey butter for a slightly sweet roll.

Can I freeze yeast rolls?

Yes, you can freeze these dinner rolls. Allow them to cool completely, then place them in a freezer-safe bag or container. They will last for up to two months in the freezer. When you are ready to eat them, allow them to thaw at room temperature then reheat in the oven.

Can I make these dinner rolls without yeast?

How to reheat yeast rolls?

Reheat dinner rolls in the oven by preheating your oven to 350°F, then place the rolls on a baking sheet. Bake for 10-12 minutes, or until heated through. Brush with melted butter if desired.

Can the rolls be prepared ahead of time and then baked later?

Yes. The rolls can be prepared ahead of time up until Step 7 in the recipe card below. The rolls can be placed in the refrigerator in the baking pan covered with a cotton cloth sprinkled with flour.
To bake, remove the baking pan from the refrigerator about 30-40 minutes before ready to bake, so the dough comes to room temperature.

What is the difference between bread flour and all-purpose flour?

Bread flour is a higher-gluten flour that is specifically made for yeast bread. It has a higher protein content than all-purpose flour, which helps to create a chewy and fluffy texture in your rolls.

Can I use all-purpose flour instead of bread flour?

All-purpose flour can be used as a substitution for bread flour in this recipe, but the end result may not be as chewy or fluffy.

  • Cut your dough ball into 16 sections. Roll into small balls and set aside.
  • Pinch the bottom of your roll to make your role stay together (see process picture).
  • Allow your rolls to sit and rise for an additional 30 minutes. Cover with a clean cotton towel.
  • While the rolls are rising, preheat your oven to 375°F.
