Preheat the oven to 350°F. Spray the pan with olive olive oil spray. Set aside.
In a large mixing bowl, add 1 (12) ounce stuffing mix, ½ cup dried cranberries, and ½ cup chopped walnuts. Mix well and set aside.
In a large skillet, add 4 Tablespoons unsalted butter, and let the butter melt. Add ½ cup diced yellow onion, ½ cup celery, ½ teaspoon kosher salt, and ½ teaspoon black pepper, saute for 3 to 4 minutes to let the vegetables begin to soften.
Add the vegetable mixture to the stuffing mixture and stir until well combined.
Slowly pour 2 ⅓ cups vegetable broth into the mixture, continuing to mix until everything is moist. Taste for seasoning. If needed, adjust the seasoning.
Add the stuffing to the prepared casserole dish and spread evenly.
Cover with foil and bake in preheated for 20 minutes.
Uncover and cook for another 10-15 minutes until the top is beginning to brown.
