In a large mixing bowl, add the sugar, yeast, and water. Stir and let sit for 10 minutes. Frothy bubbles will form as the yeast blooms.
To the yeast mixture, add all-purpose flour and salt. Stir lightly for 1 minute
Use your hands, lightly knead the dough. Roll the dough into itself and place it in an oiled bowl.
Cover the bowl with a damp towel. Let dough rise for 1 hour, it will double in size.
Once dough is doubled in size, on a lightly floured surface, cut the dough into 8 even pieces. Form each dough into a ball by tucking in the edges of the cuts and rounding out on a flat surface.
Using your floured thumb and middle finger, create a hole in the center of the bagel and then lightly stretch the hole open about an inch
Over medium/high heat, bring a large stockpot of water and baking soda to boiling, then reduce the heat to low. Place each bagel in the hot water to bath for 1-2 minutes on each side. The longer the bagel soaks, the chewier the results.
Remove the bagels from the hot water bath. Brush each bagel with the egg wash( recipe below). Season the bagels with 1 Tablespoon each of Everything Bagel Seasoning or toppings of your choice.
Spray the air fryer basket with oil. Place basket in the air fryer.
Air fry at 350°F for about 10 minutes. Bagels will be cooked through and ready to eat.
