Instructions
Preheat oven to 425°F/ 218°C. Trim the ends of the asparagus. Note 1
Place
1 pound of asparagus stalks
on a baking sheet.
Drizzle
1 Tablespoon olive oil o
n the asparagus spears to coat them well with the oil. to coat the asparagus spears.
Add the lemon juice, lemon, lemon zest, minced garlic, and salt and pepper to taste.
Roast for 8-10 minutes.
Notes
Note 1: The ends of the asparagus stalks can be used for vegetable stock. If asparagus spears are thick peel the asparagus for a more tender result.
