Slow Cooker Italian Beef Sandwiches is a fabulous beef sandwich recipe with everything going right into the slow cooker. The beef roast cooks in a blend of zesty Italian dressing and succulent jarred Italian salad peppers. Perfect for a fantastic no-fuss dinner. Great for feeding a crowd.

Place 2-3 pound beef chuck roast chuck roast in the bottom of the slow cooker.
Pour 1 cup Zesty Italian salad dressing over the chuck roast. On top of the meat place half the jar of peppers and half the juice from the jar.
Cover with lid and cook on low for 6 hours or high for 4 hours.
When the meat is tender remove most of the juice from the slow cooker and shred your meat right in the slow cooker.
Add ¼ cup grated Parmesan cheese and stir.
To assemble the sandwiches, place ½ pound provolone cheese slices on 6-8 Italian sandwich buns, add the shredded meat and reserved sweet and hot peppers.
Serve and enjoy.
